We can go snowshoeing, hiking, the sun is shining, it&#8217;s clear, the sky is blue, everything&#8217;s fine!\u201d<\/p><p>Rosa Maria left Toluca in Mexico two years ago for a new experience in Sept-\u00celes. Her hometown is located near Mexico City, 2,668 km above sea level, and has a temperate climate. This Mexican with an infectious smile is therefore used to cool temperatures and doesn&#8217;t particularly appreciate the heat. The need for security was also a determining factor in her choice of destination. \u201cI feel free here, I feel good. The stress I had in Mexico can&#8217;t compare with the peace and quiet I can have here. Sept-\u00celes seemed the obvious choice for her.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<section class=\"elementor-section elementor-inner-section elementor-element elementor-element-d18ae8d elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"d18ae8d\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-inner-column elementor-element elementor-element-1fa9cd5\" data-id=\"1fa9cd5\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-14f794d elementor-widget elementor-widget-text-editor\" data-id=\"14f794d\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>A new stage<\/strong><\/p>\n<p>With a degree in gastronomy, she ran a bistro in her hometown for 18 years until the pandemic complicated matters. Sadly, her father died as a result of Covid-19, and everything changed in her family, she explains. \u201cI applied to go to Canada and was selected. I thought it was the best opportunity. In the end, I can say that yes, I&#8217;m happy here.<\/p>\n<p>Her employer, Poissonnerie Fortier, hired her as head chef. Fortunately, they talk regularly and were able to get together in Sept-\u00celes last year for a month. \u201cBeing away from the family is difficult for me, and I know I have to face up to all these circumstances, and thank God for continuing to enjoy them in any way I can, even if it&#8217;s by Zoom or telephone,\u201d she stresses.<\/p>\n<p>Rosa Maria has had the opportunity to travel to several countries, and still plans to do so. But it&#8217;s in Sept-\u00celes that she&#8217;d like to settle down, especially since she&#8217;s found love there.
